VII - a - 1 - Ingredients : 


  • 450 g Dried apricot
  • 100 cl ice tea
  • zest of half-orange into thin and long strips
  • 120 g brown sugar or cassonade
  • 30 cl liquid cream
  • 2 cl teaspoon of cognac, calva, gin ...

VII - a - 2 - Recipe :


  1. Dried apricot and  zest of half-orange into thin and long strips in the ice tea during 12 hours.
  2. Cook 120g brown sugar or cassonade (liquid sugar) dried apricot and  zest of half-orange into thin and long strips
  3. Reduce fruit in mash,  mix it, filter it 
  4. Add 2 cl teaspoon of cognac, calva, gin ... 
  5. Whip 30 cl liquid cream 
  6. Mix liquid cream with apricot
  7. Put in Ice Cream Maker whisking once

VII - b - Ice cream with apricots


Ice cream - Apricot

VII - a - 1 - Ingredients : 


  • 500 g apricot  
  • 3 yellow egg
  • 10 clwater
  • 150 g powdered sugar complete
  • 30 cl fresh cream
  • 2 cl teaspoon of cognac, calva, rum, gin ...

VII - a - 2 - Recipe :


  • Peel and pit the apricots
  • Mash them pureed
  • Heat water and sugar
  • beat the egg yolks and add without the boiling syrup
  • beat until the syrup is cooled and white
  •  whipped fresh cream like chantilly 
  • incorporate the fruit puree in the white mixture and  whipped fresh cream like chantilly 

VII - c - apricot sorbet :

Sorbets - Apricot

VII - c - 1 - Ingredients :  


  • 150 g powdered sugar complete
  • 30 cl water
  • 1 orange  fruit and zest into thin and long strips (8 cl)
  • 1 yellow lemon 
  • 500 g apricots
  • 1 egg white

VII - c - 2 - Recipe : 


  1. in a saucepan, cook and boil 5 minutes the sugar, water, lemon, orange and its zest.
  2. Add the apricots and simmer 2 minutes.
  3. let it cool
  4. mix it fruit and syrup
  5. pour the preparation into a recipient to freeze for 2 hours and cover with a towel or a plate
  6. After 2 hours the edges are frozen and still liquid center. Take this liquid and whisk; take the egg white and beat to snow, mix the egg white to snow and syrup
  7. Freeze 6 hours
  8. before serving and to relax, put the sorbet in the refrigerator 30 minutes

  • apricot syrup
  • 12 cl milk
  • apricot ice cream
  • rum

VII - d - 2 - Recipe : 


  • Mix syrup, very fresh milk and rum
  • To fill 2/3 the mixture in a glass
  • Add apricot ice cream
  • Serve with a straw

VIII - Apricot Salad :

  • A melon
  • 3 peaches,
  • 4 apricots,
  • A glass of Sauternes or Montbazillac,
  • 3 tablespoon brown sugar
  • 1 sprig of mint,
  • 1 tablespoon anise seeds
  • Antésite - anise perfume

 VIII - a - 2 - Recipe :  


  • Cut fruits into small pieces very thin
  • Take glasses and put the mixture
  • Pour monbazillac
  • Sprinkle with brown sugar
  • Add  sprig of mint
  • Add anis seeds
  • Antésite - anise perfume (Concentrated beverage based licorice)
